I love spinach. I especially love this lemon feta spinach recipe!
I didn’t always like the green stuff, though.
I was only offered canned spinach as a child. Almost all of the veggies in our house came from a can.
Canned spinach is mushy and slimy.
It is nasty, horrible stuff.
I’m so glad I gave fresh and frozen varieties a try once I was buying my own groceries!
This spinach dish creamy thanks to the feta. A lemony vinaigrette adds a burst of sweet and tart.
I had it with salmon and potato wedges.
And then I ate some of it cold right out of the fridge the next day.
I used frozen spinach in this recipe. Frozen is a really good value. I buy it in a bag not a box. The bagged versions are frozen loose so you can take out as little or much as you want. The boxes are frozen in a big block so you have to use the whole thing.
We are obsessed with using Simply Dressed Lemon Vinaigrette dressing by Marzetti at our house. We use it as a dip, dressing, marinade and sauce. My daughter loves it on raw kale. If you can’t find it in your stores or prefer to make your own, substitute whatever variety looks good to you, such as Martha Stewart‘s lemon vinaigrette.
I used the frozen stem-in-the-bag microwave variety, but if you prefer fresh spinach? Go for it! Simply saute it in a pan and go from there.
That’s all. It’s so quick and easy, but it looks and tastes fancy! People will think you put so much more effort into it. Serve it at a dinner party and guests will beg for the recipe.

- •Bag of frozen steam in the microwave spinach
- •1/4 cup crumbled feta cheese
- •1/4 cup lemon vinaigrette dressing
- Cook spinach in microwave according to package directions
- Pour it into a bowl when cooked.
- Stir in feta and dressing while hot.
